How to reduce cholesterol with the food you already eat
Can the food I already eat really change my cholesterol?
Some of it, yes — and the part food moves is the part worth moving. Your liver makes most of the cholesterol in your blood; what arrives on your plate changes how much it makes and how quickly your blood clears it. Triglycerides answer fastest, often within four to six weeks. HDL answers to walking. LDL is slower and more stubborn, and where high cholesterol runs in the family, food alone sometimes does not reach the target your doctor has in mind.
That last part is not a failure of discipline. It is information — and it only exists if you measure, change something, and measure again. So the honest version of this article is: move what is already in your kitchen, hold it for about 90 days, and let a repeat profile tell you what actually shifted.
Which number am I actually trying to move?
"Cholesterol" on a report is not one number. A ₹650 Lipid Profile measures total cholesterol, triglycerides and HDL from a single fasting sample, and your LDL is worked out from those three. Each line has its own habits attached to it, which is why "eat healthy" is such useless advice — it does not say which line you are aiming at.

Nothing below is a new food, an imported seed or a powder. It is the same kitchen with the dial moved.
Watch the oil tin, not the oil brand. Mustard, rice bran and groundnut are all reasonable. The argument about which one is far less useful than the arithmetic of how much the house gets through in a month — a family of four finishing one tin where two used to go is a real change. Oil that has already deep-fried a batch of pakoras is best not put back on the flame for a third round.
Put the chokar back in the atta. Ask the chakki to leave the bran in, or make one bajra or jowar roti a day through winter. Soluble fibre is the quiet worker here: oats, chana, rajma, bhindi, lauki, apple, isabgol. It binds bile acids in the gut and carries a little cholesterol out with it instead of letting it circle back.
Rescue the 4 pm. The samosa-and-jalebi hour does more to your triglycerides than the spoon of ghee on your roti ever will. Bhuna chana, a small mutthi of peanuts, roasted makhana, a fruit, or chana chaat with onion and nimbu — all of them keep the ritual and drop the deep-fry.
Halve the sugar in the chai, not the chai. Six cups at two spoons each is roughly twelve spoons of sugar before dinner. Go to one spoon, then to half. On repeat profiles, this is the change people most often see on the triglyceride line.
One raw thing at every meal. Kachumber, mooli, a wedge of cabbage, cucumber with kala namak — eaten before the roti, not after. Volume and fibre first means less of everything else fits.
Dinner earlier, and lighter. Roti-sabzi at nine and sleep at ten keeps fat circulating overnight. Moving dinner even an hour earlier, with dal and sabzi carrying more of the plate than rice, is a change most Kanpur households can actually keep.
So is ghee the villain?
Not on its own. Ghee is saturated fat, so quantity counts — but a spoon on a roti is rarely what decides a profile. What decides it is the day where ghee, full-cream milk, mithai, the vanaspati inside a bakery biscuit and a fried evening snack all land together. Vanaspati and repeatedly reused frying oil are the two worth reconsidering first.
Whole eggs are fine for most people: the saturated fat in a meal does more to LDL than the cholesterol in the egg itself. If your LDL is already high, or you are on medication for it, ask your doctor where your own line sits rather than following a rule made for someone else.
